i have the same issue and it is comes not from the wipers but from the motor/ Gestell mechanism...my opinion.

Sounds absolutely normal to me. The amarok is a working car and vw didnt spend much on the insulation. You will always hear the wiper engine working and the relais click too.

I have also Bosch aerotwin and for me this sounds normal, too.
For me it Sounds like when the flanks of the windshield wiper turn over.
And wehn they new ones it Sounds normaly for me.

I just got new windshield wipers from Bosch Aerotwin.
But these make a lot of noise.
This is my first Amarok v6 from 2017.
For this I had a Peugeot expert hdi180 from 2018 and he also had Bosch aerotwin.
And they were very calm.
Who knows what's going on.
What noise, wind noise or squeaking noise?
If it's a wind noise, then the air flow on the Amarok probably create some turbulence on the wiper blade's spoiler due the Amarok's shape and on other cars the aerotwin who should not do that.
You may switch to normal shaped wiper blades, they should be fine. At least my probably VW wiperblades make no considerable noise, just squealing because i need to change them,

1, That's because of the wiper blade of the windshield wiper.
When the wiper blade moves in the other direction, it lifts slightly and the pressure from the springs on which the wipers are mounted, makes this noise sound when the wiper goes down again.
Maybe the nois sounds louder because they are new ones.
2, This is the case with every Amarok model with interval switching
As for the second "issue": It's not a bug, but a feature. 
Check the manual, below or euqal to a temperature of 4°C, the wipers switch to another position, so they can handle the cold better.
